No Bake Chocolate Oatmeal Bites

This recipe was sent to me via e-mail. I like oatmeal and I like chocolate! It really looks pretty easy and being on a vegetarians diet (Dr's orders) it looks like something I can eat. My son is picky and I think he might like it too. Be sure to share it with your social media friends.

These tasty bites are a healthy treat for the entire family! And the best part? They're super quick to prepare.

Oats are high in fiber, and these bites are also packed full of protein and healthy fats. Choose a 70% or higher chocolate if you can for a low-sugar option.

No-Bake Chocolate Oatmeal Bites

Ingredients

  • 1 cup old fashioned rolled oats 
  • ⅔ cup toasted unsweetened shredded coconut 
  • ½ cup almond butter or natural peanut butter 
  • ½ cup ground flaxseed (flaxseed meal) 
  • 2 tablespoons chia seeds
  • ½ cup dark chocolate chips  
  • ¼ cup honey 
  • 1 teaspoon pure vanilla extract 

Directions:

  1. Measure each ingredient and add to a large mixing sized bowl. Stir until thoroughly combined.
  2. Cover the mixing bowl and refrigerate for 1-2 hours. Chilling helps the mixture stick together so it’s easier to work with. Pro-tip: To chill faster, spread the mixture out on a baking sheet and put into the freezer for 20-30 minutes. 
  3. Use a spoon to scoop out the mixture and using your hands, roll into balls, about 1 inch wide. Pro-tip: If you have a cookie scooper to make the balls, it makes ~25 balls total. 
  4. Enjoy immediately or store in an airtight container in the refrigerator. May layer parchment paper to prevent balls from sticking together.
