are also packed full of protein and healthy fats. Choose a 70% or
higher chocolate if you can for a low-sugar option.
No-Bake Chocolate Oatmeal Bites
Ingredients
- 1 cup old fashioned rolled oats
- ⅔ cup toasted unsweetened shredded coconut
- ½ cup almond butter or natural peanut butter
- ½ cup ground flaxseed (flaxseed meal)
- 2 tablespoons chia seeds
- ½ cup dark chocolate chips
- ¼ cup honey
- 1 teaspoon pure vanilla extract
Directions:
- Measure each ingredient and add to a large mixing sized bowl. Stir until thoroughly combined.
- Cover the mixing bowl and refrigerate for 1-2 hours. Chilling helps the mixture stick together so it’s easier to work with. Pro-tip: To chill faster, spread the mixture out on a baking sheet and put into the freezer for 20-30 minutes.
- Use a spoon to scoop out the mixture and using your hands, roll into balls, about 1 inch wide. Pro-tip: If you have a cookie scooper to make the balls, it makes ~25 balls total.
- Enjoy immediately or store in an
airtight container in the refrigerator. May layer parchment paper to
prevent balls from sticking together.
